Easy Recipe for Ham and Chicken Pinwheels
This meat starter recipe can be served at a sit-down dinner or as part of a buffet. These pinwheels look really elegant and they are simple to make. This recipe makes twenty four servings. If you like, you can omit the crackers.
What you will need:
– 4 chicken breast halves, boneless and skinless
– 4 thin slices ham
– 1/8 teaspoon salt
– 1/8 teaspoon black pepper
– 1/2 teaspoon plus 1/8 teaspoon dried basil
– 2 teaspoons lemon juice
– 1/8 teaspoon garlic salt
– 1/4 teaspoon paprika
– 1 teaspoon orange juice
– 1 teaspoon grated orange rind
– 8 tablespoons mayonnaise
– 24 crackers
How to make them:
Preheat the oven to 350 degrees F or 175 degrees C. Pound the chicken breasts to 1/3 inch thickness. Mix the salt, garlic salt, 1/8 teaspoon of the basil and black pepper together and sprinkle this over the chicken, then put a ham slice on each chicken breast.
Roll them up Swiss roll style and put them seam-side down in a buttered 12 x 6 inch baking dish. Sprinkle the paprika over the top and drizzle on the lemon juice. Bake the chicken pinwheels for half an hour or until the juices run clear. Cover the chicken and put it in the fridge to chill.
Mix the orange juice and orange rind into the mayonnaise. Add the rest of the basil. Cut the cold chicken rolls into 1/2 inch slices. Top each cracker with some of the orange spread, then a chicken and ham pinwheel. Serve them immediately.
