Finger Foods for a Wine and Cheese Party – Bruschetta Recipe

Good bruschetta can really make a wine and cheese party very successful. Many times bruschetta is made out of sight because people do not know how easy it is to make this finger food. If you want to create something your friends will be amazed about with almost no effort, this is it.

You will need a couple ingredients to make a great bruschetta. Green onion, feta cheese, Greek style soft cheese, tomato, garlic, olive oil, French bread.

The secret to great bruschetta is the topping, you need to find the best tomatoes possible. Never store the tomatoes in the fridge for this recipe as the cold temperature of the fridge will cause the tomato too loose all of its flavor.

First bring a pot of water to a boil, the hot water will help you take the skin off the tomato. Mark an “X” on the bottom of each tomato and place in the water for half a minute. We are not trying to cook the tomato. Next to the pot you should have a large glass bowl full of ice-cold water. Transfer the tomatoes to the chilled water and you should begin to see the skin separate from the flesh of the tomato.

Next peel the skin off the tomato. Quarter the tomato so you can remove the bitter seeds. Chop the tomato and place in bowl. Finely chop the green onion and place in the bowl. The home-made Greek cheese or feta cheese should be cubed and added to the bowl. Some people are great a chopping garlic into small pieces, a garlic press is the perfect tool for this recipe. The garlic must be very finely chopped. If not the result will be one of your guests eating a large piece of garlic and having garlic breath for the rest of the evening possibly a day or two after. Once all these ingredients are in your bowl give is a gentle mix to see if you have too much or too little of any ingredient and adjust accordingly. Finally you can add ¼ cup of olive oil. Do not to add to much oil as you do not want a wet mixture.




The french bread should be cut right before serving. The width can be up to half an inch in thickness, to thick and your guests will have a difficult time eating and if you cut the bread to think if will not be able to hold the topping.

Scoop the topping with a small spoon and gently place your topping on each piece of bread and you are ready to serve.
