Organic Recipes – Asian Chicken Eggplant Stir Fry

This article will teach you how to make the Asian Eggplant and Stir Fry Dish. First you will need the ingredients. Prepare two tablespoons each of dried basis, Asian Stir Fry Spice Blend, chopped fresh organic peppermint, and low sodium soy sauce. Also, ready one tablespoon each of peeled and chopped fresh ginger, extra virgin olive, and peanut oils. You will also need one pound of chicken breasts with both skin and bones removed. Prepare the chicken breasts beforehand buy cutting them into 0.5″ by 2″ strips. Also prepare 3 quarter cups of chicken broth. Now for the seasonings you will need three scallions and 2 cloves of minced garlic as well as one piece each of peeled and diced small eggplant, coarsely chopped yellow onion, and seeded and cut into julienne red and yellow bell peppers.

After preparing all the ingredients, it is now time to start with the cooking. To prepare the frying pan, set the heat to medium-high and place the peanut oil. Then put in the eggplant, yellow onion, and red and yellow bell peppers. Stir fry for at most 10 minutes, and then transfer them to a bowl. Cover the bowl to keep them warm. Now get back to the frying pan, keep the heat at medium-high and add in the extra virgin olive oil. Put in the basil, mint, garlic, ginger and sauté for a minute. Remember to not stop stirring for the entire minute. Now add a quarter of the chicken broth and keep sautéing for another minute. Then put in the chicken breast strips as well as the soy sauce and stir fry for another couple of minutes. Now add the remaining two quarters of chicken broth and wait until the dish boils. Now it is time to combine the eggplant mixture together with the chicken mixture. Put the eggplant mixture into the frying pan and sauté for three more minutes. Put in the spice blend and stir fry for another minute. Now your dish is ready to serve.
