RASAM (PEPPER WATER)

To prepare recipe Rasam we require
One small cup red of gram dal,
Pinch of turmeric,
Two red tomatoes,
One big green chilli, fresh Juice of 3 limes, Salt add to taste.
One tsp sugar
A few curry leaves
A handful of chopped coriander leaves. Roasted and powdered Coarsely:
Four kashmiri chillies.
Three long red chillies ( dry ).
One tea spoon coriander seeds.
One tea spoon Bengal gram dal.
Two tea spoon fenugreek seeds.
Two tea spoon cumin seeds, pinch of asafoetida, 5 pepper corns.
1 tsp ghee,
1 tsp mustard seeds,
2 tsp black gram dal.
In order to prepare this Indian recipe. ( Rasam ) First Pressure cook the dal in sufficient water with a pinch of turmeric, blend to a puree. Then set aside. Fine Chop the tomato and green chillies.
Boil 2 cups of water : add the tomatoes, green chilli, salt and sugar. Cook for a few minutes or till the tomatoes are
done. Lastly you have to add the powdered spices.
Cook for 5-7 minutes and add the pureed dal. Boil, adding water if needed; the consistency of rasam is quite thin. Add curry leaves and coriander leaves and boil till a little reduced. Add lime juice and remove.
Heat the ghee in a small pan, add the mustard seeds, red chilli, black gram dal, when they splutter pour ever the rasam. Serve hot with rice and papad.
